While running EZBI reports for the team, November 14th is missing, while November 13th and 15th are there. Is it listed as a non-working day for some reason, and if so how do I get that table revised?

Welcome to the eazyBI community!
By default, eazyBI adds members to the Time dimension only if there is some activity on that date. Therefore some dates can be missing due to the lack of any activity in the selected projects that specific day (no new issues created and no issues updated).
If you are an account Owner , User Admin, or Data Admin, you can manually add members to the Time dimension to fill in those gaps in the past or add future projections; see details here: Time dimension .
Or you can adjust import options and add date members for a date range automatically during data import: Data from Jira .
