I copied word-by-word this:
What I noticed is that on my version, data doesn’t stack.
When I click on “stacked”, they overlay.
I’m losing my sanity over it.

Don’t lose your sanity! 
One thing that comes to my mind is that you might have chosen separate stacks for “Completato” status while playing with some options. Please try to reset to default this (and maybe all other statuses as well):
