Does anyone have a good example of a Release Burndown Chart created in eazyBI?
Preferably one similar to the link below where changes in scope can be easily identified as values below the baseline?

There are several eazyBI report examples in eazyBI Demo account. See for example Story points burn-down in selected Epic or Version report which are both similar to what you are looking for.
You can export these report definitions and import them to your account; and modify them with additional Sprint scope change measures.
Let me know how far you are with report builidng if you have some specific questions (more sensitive details or screenshots can be sent to our support mail).

The Version report you referenced made a 5 Hour challenge turn into a 20 min project!!!
Changed the version to Epic Link ( and like magic I can now publish my Epic Burndown!)
