I would like to plot the number of issues with a certain Measure.
E.g. number of issues spent X days until the issue was escalated (I do have this measure), and potentially group them. e.g. 100 issues spent 0-5 days, 50 issues 6-10 days, 20 issues 11 - 20 days etc.
Is there any way to do this?

There is a way to create custom dimensions with intervals, but use-cases can be very different.
Please share the formula you have today to count “number of issues spent x days until the issue as escalated”
And tell more details about the layout in your report!
What dimensions do you use in the report rows, columns, page filters. What other measures have you selected?
