Considering I have one resource allocated to more than one project, is there a way where I can know the total hours they will be spending in the next sprint across all projects?
Resource A is allocated in following projects for next sprint:
Project 1: 16h
Project 2: 10 h
Project 3: 20 h
Total Resource Capacity: ?

There is no standard measure in the eazyBI data model for the resource capacity. A solution is possible if you use Tempo Planner for resource planning and do that at the issue level.
A workaround might be possible by importing the resource allocation data from an external source as additional data: Additional data import into Jira Issues cube. That requires that the allocation data is available in specific form and structure (see the link for more).
